For those of you that own the epson 1080UB, can you tell me how a 2.35:1 aspect ratio movie looks on your screen? Is it played at full width with the typical black bars on the top and bottom or are the sides cut off?

That depends on your source not the display. Typically, movies in DVD and BD retain their original aspect ratio. So, you will get bars in the top and the bottom.
