My Panasonic DVD-R has settings to record at 1/2/4/8 hours. It also has an option called "F-Record" that allows you to set it to record for a specific length of time. Question: If I set it to record for 1 hour and 5 minutes, will the quality of the recording be equal to that of a 2-hour recording, or will the quality actually be as good as it can be for 1 hour and 5 minutes? (So it would be very close to the quality of a 1 hour recording.)

Yes, it will be close to the 1-hr record setting.

Flex recording (F-record) sets the average bit rate for the recording based on the time of the recording, so the 1:05 hr recording should be very close (probably indistinguishable) from the XP (1 hour) recording mode.
