I have an Olevia 65" LCD thats equipped with a Realta HQV video processor. I also have a Denon 2809ci which has a Faroudja DCDi video processor. As it stands right now I don't know anything about them, or whether I should. Are either worth their salt as video processors? Should I pursue either one or disable as many of the features as possible and get a separate appliance?

Well, the short answer is that with those 2 technologies, you don't need a separate appliance. The Realta HQV is one of the best processors out there (but make sure it is the Realta and not the Reon. The Reon is better than the older DCDi processor whereas the newer DCDi is on par with the Reon).

If it were me, I would try it out with one processor enabled at a time. I'm willing to bet that I would end up with leaving the Realta on and turning off the Faroudja. Certainly do not leave both on! that would lead to artifical effects due to over-processing.

The manufacturers website states its a SiliconOptix Realta HQV™ by Teranex Video Processor. I'm going to hazard a guess that its is what processes the aspect ratios. Is there any reason I should get odd vsync issues when I have it in 1:1 vs Fullscreen or Aspect modes?
