Does the Dell 7609WU DLP projector have vertical Lens Shift? Projector Central listing says no, but the PDF manual on the Projector Central site shows a picture with adjustments for lens shift (Not keystone).

Yes, vertical and horizontal lens shift (both manual).
I've had one for a week. Once I get a replacement - QC issue on first one - I'll post a full review of it.

In short: it's great, if you can tolerate frequent rainbows.

Right now we have older DLPs and LCDs in our conference rooms and people don't even know they are different so I don't think rainbows will be an issue if I don't bring it up. The problem with the previous units is that no one cleans the filters on LCDs in a work environment so they all have bad blue polarizers. I've got them going LCD to avoid wasting tens of thousands of dollars again.

CliffSignificantly brighter than my true-1900-lumen Sanyo PLV-70 (150h old bulb) when displaying a 30% bigger image in eco-mode and with colours calibrated to comparable levels.
The Dell is specced at 3850 lumens and they're not exagerating much or at all. We'll see how long it keeps that brightness as the 300W bulb ages...

As a professional photographer, I am considering Canon XEED WUX10 and DELL 7609WU projectors for general use like slide shows (photos 1200 x 1800 pixels) in rather large conference rooms with dim light, and HDTV projection at home, also with dim light but no full darkness. So I need high brightness, high definition and natural colors. Do you recommand these projectors, DELL in particular, as it is cheaper?

It has the brightness , sharpness and good geometry that you seek but I'm not sure the colours are as saturated as you might like for photography work. Projectorcentral's reviews regularly reccommend the colour of Canon's LCOS-based models for photography but like you say their WUX10 is double the price of the Dell and availability/reviews are limited.

As for viewing HDTV, the Dell is only suitable if you're averagely or less-than-averagely affected by the DLP "rainbow effect".

If those comments haven't put you off, do what I did: contact Dell sales and get it in writing that you can return the unit for minimal cost if you're not satisfied. Their return fee in the UK was was extremely low (£50) which allowed me to risk buying one unseen.
