Im getting ready to run HDMI cables in the ceiling for my Pioneer FPJ1 Projector. Which is the best cable brand to go with. I've been told its all a gimmick. What's the truth? I heard monoprice and blue jean cables will get the job done but will they compare to the higher end brand like Ethereal and Audioquest or even Monster Cables? Which HDMI will give me that best quality? Ethereal, Audioquest, Monster, Blue Jean?
I only need a 7-10 foot cable.
Is it ok to use 1 HDMI wall plate for a cleaner install look or will it effect the performance of the cable? I Was thinking of running a 1 foot hdmi cable from the projector to a wall plate then running a 7-10 foot hdmi cable in the ceiling.
I need to order some cables ASAP! What do you guys suggest?

at 7-10 feet, pick whatever cable floats your boat, and it should be fine...
the monoprice (or tartan) ones would be my choice... if i had to make a really long run, i'd get the bluejeans belden bonded pair cable...
the "truth" about hdmi cables is that they either "work" or "don't work"... the "truth" is that monster/whoever has been able to lighten consumer's wallets with clever marketing and packaging...
as far as the wall plate... with that length, it should be fine, but i'd probably just use something like this (http://www.monoprice.com/products/product.asp?c_id=105&cp_id=10425&cs_id=1042505&p_id=3997&seq=1&format=2)... i recently had to make a similar decision to you, and decided that i didn't want to deal with the potential aggravation of additional connections...

I selected a 30-foot BlueJeans HDMI cable with a wallplate to drive a JVC RS-1. It works flawlessly at all resolutions including 1080p/60 and 1080p/24. Interestingly, the 1-m cable feeding the wallplate is a generic variety - just whatever came in one of the boxes.
Any reasonable well-constructed cable will work at the sort of distance you're dealing with. When you get to 30 feet or more, it becomes more critical.

Cabling is not "all a gimmick." However, if an HDMI cable is performing for the task, there is no difference. The distance you're running is not terribly far, so shouldn't be very difficult for any decently made cable to handle at 1080p60. As long as you have an image at the resolution you require, and with no sparklies or other obvious artifacts that indicate cabling bandwidth failures, then there won't be any differences and beyond that it becomes more akin to "a gimmick."
If you require piece of mind that you want the very best cabling possible, get the blue jeans bonded cable. If you want to save some cash, there are cheaper blue jeans/tartan options, or monoprice, etc. I have no experience with ethereal. I would recommend against Monster or Audioquest compared to the options I suggested which are equivalent or superior in quality and cost less generally.

Generally on principle also I would avoid using wallplates or other couplers if possible, however again if it works fine, then you're good to go. HDMI is essentially an all or nothing proposition. Either it works 100%, or it fails entirely. There is a very small zone where it begins to fail and you get sparklies, but I would characterize that as still unacceptable and put it in the fail column. If you don't see sparklies, then there is no improvement to be had. Either it works, or it doesn't work, basically.

Thanks guys! Monster and Audioquest are out then. So I'll just get one from Monoprice or Blue jeans. Probably just going to go with a Blue Jeans bonded cable there pretty cheap for a 10 foot run.

Be aware that the bonded cable is not very flexible. This may or may not be a concern for you.
