The 8300HD gives you the option to select 480i, 480p, 720i, 720p and 1080i.

is there any reason why you would want to have the progressive settings used for 480 and 720 instead of the interlaced?

As in only allow the cable box to display 480p, 720p, 1080i. Would that be considered optimal? or should I also have the interlaced settings allowed too.

I have the box connected via HDMI to a Panny TH58PZ850U.

Thanks guys! I'm just looking to utilize the best of what i have available to me and if i should be using the interlaced settings too, i'd wanna know.

Your TV will likely do a better job deinterlacing than the box so enable 480i.

you would usually just match it to the natural resolution of the TV.

It depends on the equipment, as some TVs do deinterlacing well, while others (like mine) kind of suck at it. Same thing for scaling.

Try it on all settings and see which you like.
