Hi all, how do you think about the media room below? I plan to do a 100" projector with 16:9 screen, should I setup a 7.1 system or just 5.1 system?
Any suggestion are welcome!

I added letters to 39Stamp's suggestions and threw one of my own in. Its nice to walk into the room and see the screen with immediate impact, also might give you a little more throw for the PJ. I like mine, and 39's one that I lettered "C".
I am guessing taking back space from the master closet is a non starter.

I can also remove part of the master closet, but there will be a supporting column in the middle of the room.

Thanks for all the advise so far, I am wondering 7.1 is too much for this small room, do you think so?

Here's another thought. In this setup you could get a bigger screen size.
You could also could use HT seating instead of a couch and put 2 seats on the right as you enter from the back and possibly 1 or 2 other seats to the left (but at an angle). Also keep in mind you can potentially move your sub around anywhere in the room.
Your A/V Equipment could go in the Master closet if you needed the extra room or you could cut a hole in that wall and build shelving or use a rack that extends into the master. If so, you could use that corner back there for a popcorn machine or something else.

For this small, am I better off to get a 5.1 instead of 7.1?

I would at least wire it for 7.1. You could start off with 5.1 decide from there. You might find that once you get it finished that shortly after you may be bitten with an upgrade bug. I started with a 92" screen and it seemed huge at first. I now have a 106" screen and if my room setup would allow I would want to go bigger for sure.

there are only 8' between my sofa to the 100' 16:9 screen, is it ok?
I am thinking about option "C" listed above.

Is that from the front of the sofa or from your eye position? 100 inches will be quite big, a little too big for most people from 8 feet. This would place you about 1 screen width away. 1.5 screen widths away has been a rule of thumb I have seen in the past, that said with a 1080p projector the image quality may still be good closer in. The best thing to do would be to hold off on purchasing a screen at first. Project directly onto your wall and see if it is too big for you.
