Has anyone used a TIVO with multiple SDV channels? How is it different?

I'm not sure what you mean by the question. SDV channels are treated just like non-SDV channels when the cable company's SDV adapter is connected to the USB port on the rear of the TiVo.

The most common difference is in the behavior of TiVo Suggestions. Your provider can disable recording of suggestions from SDV channels. I believe a provider also has the ability to disable the buffer for a SDV channel on the inactive (not currently selected) tuner when it is not recording, although this is less common.
