Using "One Touch Copy", a few times, I copied a portion of a VHS tape to the hard drive. When I tried to stop the copying process, I could not, no matter what button I pressed. The only way to stop it was to unplug the Pan. What am I doing wrong?

In your manual, page 60 starts the One Touch Copy portion of the instructions. Page 61 has the VHS to HDD or DVD information. Along with copy instructions, page 61 states the following.
∫ To stop copying partway
Press [∫, STOP] or press and hold [RETURN] for about 3 seconds
or more.
≥However, you cannot stop finalizing after it has started.
≥Even if “Copy and finalize” is selected in the confirmation screen,
the disc will not be finalized if you stop copying partway.
This has worked for me.
