The system supports 10BASE-T, 100BASE-TX and 1000BASE-T networks. Do not connect a standard telephone line or other types of cords or cables that are not compatible with the system, as this may cause heat build-up, fire or malfunction.
This quote from the PS3 manual made me nervous, so I thought I'd ask. Which one and is one better than the other?

Either one is capable of supporting anything you want to throw at your PS3, including Gigabit ethernet. Cat 6 is the newer standard, so if you're running 'in wall' wiring, use it for the sake of future compatibility. If you're just using a patch cable, cat 5e is more than enough - and unless you are using Gigabit switches on your local network, cat 5 is fine for up to 100mb transfers.
Having said that, a high speed connection/cabling is only going help for local data transfers on your network - if this is just for internet connectivity, the limiting factor is your internet speed which is probably much less than 10mb. In that case, any patch cable you can rustle up is going to work fine, provided it's RJ45 ethernet (10BaseT or better). Your PS3 should have shipped with a Cat 6 patch cable, but I'm assuming you need longer. (100 meters is the limit).

Cat5e supports gigabit ethernet just fine. Regular CAT5 does not. CAT6 does as well of course.

For patch cables either CAT5e or CAT6 our good enough. It is the long runs you need to worry about. If you are going longer than 328ft then you need to get picky about which is better.

if you are going over 328 feet then you are past the footage allocated for both cat 5e and 6
