I know you can't use others deflexion settings because everyone's television is different, but what about the other settings such as all the color settings and whatnot under video 1,2 etc if you have the same television?

All sets have different settings because of the tolerance between all the components that go into the TV set. If the resistors and capacitors were all made to military spec, then maybe you could. But $2000 TVs don't cost $30000 because of that.

Lots of variance between components means the numbers don't mean the same from model A to B to C on the same line.
