On the market, are there any video scalers or A/V receivers that support component/composite/YC video upconverting to HDMI? I've been searching and reading and can't seem to find something that accomplishes the task of upconverting these analog sources to HDMI.

*ALL* video processors discussed here with HDMI output support component/composite, etc. input. Look at the iScans, Lumagen, Crystalio, etc.

You can't "Upconvert to HDMI"... HDMI is CONNECTION TYPE, and as such it has nothing to do with resolutions. You can transmit over HDMI link video signal with any resolution from 480i to 1080p. You can also transmit simultaneously multichannel digital audio.
As far as I know, any Video Processor equipped with HDMI/DVI outputs WILL output over them any signal input into it, regardless of type of connection (digital or analog), as long as it is within it's accepted range and type. That's certainly true for LumagenHDP, which I own.
For digital connections, if you input HDCP encrypted signal, digital (HDMI or DVI) output will be encrypted also, and analog outputs will be disabled. That's HDCP compliance requirement which has to be fulfilled by every piece of consumer video equipment.

Thanks. Yes, you got me on the HDMI being the connection type and not the transport protocol. My main goal is to have a single HDMI cable run from the projector to my component rack and not have to run Component and YC as well. Are there any recommendations to a price concscience method to do this? I had thought I would just add a simple video scalar to the rack to do this, but there don't seem to be any within my price range. I would be willing to upgrade my HK AVR-525 receiver to something else and spend more if this ability exists in new receivers under the $1k mark. My coworker suggested an Onkyo 801(?) that he has which scales S-Video to Component and also had HDMI ports (which he has not tested, yet).

I ended up going with the Onkyo TX-SR804 to replace my HK AVR-525. Haven't given it an audio stress test yet, but the video HDMI/Digital transcoding seems to work so far. I can't see the difference with component to projector vs component to Onkyo transcoded to digital and out via HDMI. My only gripe is no quick OSD (volume) using the HDMI output.
