Does anyone know of a way to capture a HD screenshot from a ps3?

good question. I got half decent results taking a picture in the dark with the flash off. But it wasnt half as good as some of the ones ive seen here.

Also make sure you use a tripod to steady the camera. If you are taking a shot in the dark the shutter speed will probably be fairly slow so a tripod will help eliminate camera shake.

I was hoping for the possibility of something like Alt-Print Screen.

There is no such feature.

There are only two ways to take a "screenshot":
- Indirectly with a Digital Camera
- Directly with an expensive professional HD capture card

Black Magic Design has Intensity HDMI capture card, maybe it could grap videos from ps3 output. It cost only +200 USD.

There are plenty of solutions for you...none are cheap:
