So I had my Elite at my fiance's house and the TV over there supports 1080p, So naturally I had the Elite set up on 1080p. I moved it back to my house and forgot to take it off 1080p mode. I get sound, but no picture. Is there any where online that walks you through how to set it back to factory defaults without having picture. Another option would be to memorize the ups and downs and button clicks and hope Im on the right options without picture. Strange Question, I know.....

The Elite perform's its own handshake with your TV if you are connected via HDMI. In short, there's nothing in the menu for you to change. Assuming that your 360 is fine, have you checked the connection between the console and your TV? Perhaps a cord is loose.

My TV doesn't accept 1080p, I just assumed it would not show anything. I checked the cables and there isn't anything loose. I will just take the night off from Live playing and take it back over there to switch the setting.

Assuming you still have sound start the 360, press left 3 time to get the system blade, press A 3 times to get to HDTV settings, press up twice to get from 1080p to 720p and press A again.

Yes usually when you change settings it gives you 30 seconds to accept the new settings, and if you do not it then resets to the original setting. I think what you have to do is turn off the machine, then turn on the machine, hold 'Y' (yellow button) and at the same time press the R (right) trigger. This should reset the video settings.

Can you just hook it up via the crappy composite cables so it runs in SD then set it to output 720p and then hook it back up via HDMI?

Nope.
The 360 remembers different settings for different connections.
So setting *component* to 720 or 1080i won't do anything for HDMI or vGA.
Composite won't even give you a choice; it'll simply go to SD right off the bat.

Thanks Vegas, I knew you meant right. I just did that and it worked. I was too lazy to unhook everything and take it back over to my fiances. I tried the Microsoft thing, but I guess I wasn't holding the y and Right long enough. It wouldn't ever reset. Thanks for all the help though.
