[sorry if this is a stupid questions, but I'm new to projectors and HT setup]
So I finally bit the bullet and ordered and HD1000U projector for my PS3.
The projector should be arriving in a couple of days, and in the meantime I'm trying to figure how to set it up.
The problem I have at the moment is sound. If I connect the PS3 to the projector using HDMI, what else do I need to have sound? Neither the projector nor the PS3 can have speakers connected directly to them so this is a dilemma for me.
I have a set of 5.1 speakers which used to be connected to my PC sound card... is there anyway I can use these? What will I need?

Does your sound card have an optical input? If not you will have to break out the stereo cables that came with your PS3 and run those from the PS3 into the card and viola sound. That is if a PC card works just like an A/V receiver. :)

No optical input on the soundcard. How much would a standalone receiver which can take input from the PS3 and output it to my speakers set me back?

Head to the receivers forum and search around for PS3 options. Anywhere from $150-$1,000 dollars, depending on how much of the PS3 sound output capability you want to take advantage of. If you just want sound and don't really care about all the formats/lossless/etc, it'll be on the lower end of that spectrum.
I'll be using pretty much the same setup, but with an epson 400 pj.
I'm using the Sony HT-DDW 700 receiver. It has an optical port that I will put directly into my ps3. I'm debating between HDMI and component cables to the pj, but thats a different story.
The sony receiver has some limitations, but I find it to be suitable for a smaller room where you want some nice sound. The speakers come with the wire directly installed into them, which means you can't really make the wire longer, or replace them if the wire breaks somehow. This could be a problem for some people, and while I was a bit upset with it initially, everything has worked nicely thus far. It has a fairly powerful woofer, even though it is does not plug into the wall.
So far, I have enjoyed it on an xbox 360, DVD player, and my old 20 CRT.
This is a low cost receiver. You cannot plug HDMI into it, or even video inputs, but like I said it accepts an optical line. If your looking for something low cost (you can find it online for a very reasonable price, or at your local electronics store if they price match), I would def. recommend it. It sounded 10x better than the dirt cheap sets. The sound is very enjoyable to my ears, and I am almost certain it'll be better than your pc speakers.
