I am thinking of mounting my projector on the underside of a lift-top coffee table. When not in use it would be hidden in the storage cavity. My only concern seems to be the consistancy of the scissor lift to raise the table to the same height each time in order to postion the image accuartely on the screen.

I think you'd find that to be a very annoying set-up. Even if the scissor mechanism raised to about the same position each time, I think you'd find that you would have to dial in your projector with just about every use. Also, I'm certain that it would jiggle around quite a bit and that would be very distracting. My projector is ceiling mounted and if my wife &/or daughter are playing in the living room upstairs, the jiggling is really annoying.
Finally, if you are mounting the projector upside-down, I think you would have trouble getting the picture positioned correctly on the screen. Generally speaking the ceiling mount method assumes that the bottom edge of the lens is going to line up with the top of the screen (give or take a few inches). Having the projector 4 or 5 feet below the top of the screen will likely give you trouble.

Seems to be reasonable, do drop down ceiling lifts cause you to have to dial in the image each time the are lowered? Also do you have to adjust the pj on the coffee table or do you bolt it and the table to the floor to prevent this? Lastly, how do eliminate vibrations from above of from outside the room like walking?
All of your concerns seem valid but seem to be existing problems that have to be dealt with even without the lift-top. Would it help if the top could be braced at the highest position for stabilization? I could also mount the pj right-side-up under the lid and use the remote to make adjustments.

It would work fine as long as the placement is appropriate. Lifts were often used with CRT projectors coming out of the ceiling, and physical alignment on a CRT is FAR FAR more crucial than a digital.

My room is 21ft deep with vaulted ceilings. I want to keep the screen size below 80" as I use the back 3rd of the room for office. I am going with the PT-AX100U and the screen size at 20ft is over 100". I really dont want a ceiling mount on pole.

That would be a very interesting setup. Make sure that the projector will actually fit in the cavity of the table. You may have to adjust the lens offset or throw each time you use it, but so what, for convenience sake, this looks like a great idea.

Should work fine as long as the lift is sturdy enough, which I assume it should be.

How will you mount the PJ under there? right side up or upside down? Lens shift is going to be a very big factor. The surface looks like a stone surface so mounting will be interesting. Once you get it hooked up and ready to use, I would fix a way to lock the top in the up position so it doesn't slam down while your PJ is running.

I think right side up will have to be the case. I will have to use the remote to make adjustments as I will not be able to access the buttons. I was thinking of building a fixed lever or brace that could fix the top at the open position and then fold it down when I want to close the lid. The surface is wood laminate and I can use screws on the bottom. The PT-AX100U supports lens shift but I should be good as the lens will be at around 24" from the ground and the screen bottom will be about 40" from the ground. I am going to run the electrical and HDMI under the floor to a flush mounted box in the carpet. I was thinking of including a UPS if I can find one that can reside in the floor. (upstairs media room)
