Would hooking up a dish dvr, HK 235 receiver and olevia 32 lcd using HDMI be the best way even though I'm not getting channels in HD. I just want to get all channels in 5.1 in true surround or should I just use digital coax and optical from each component to the HK?

HDMI would still be the best connection for video for SD channels. There wouldn't be any difference in audio quality using either HDMI or optical/toslink for HDTV since Dolby Digital will pass over both.

Ok so I need to use both HDMI and optical or digital from the DVR to the receiver? What about a DVD player. Which would be best to use the HDMI connection, for the dish DVR or the DVD payer? HDMI is only for video and the optical and digital for audio?

HDMI will pass video and audio. You don't need to connect an additional cable for sound if you're sending everything to your receiver.

If your DVD player is an upscaling one, then you most likely have to use HDMI to reap the benefits. Most DVD players will not upscale over component.
