I've got a 720p projector and a Xbox360.
I've recently purchased but not yet shipped a PS3.
What is generally considered to have the better upscaler?

I have an Epson 400 and use my PS3 to upscale SD DVDs...It does pretty well IMO. It always looked good on my 40" LCD, but I thought that it wouldn't be that great with a 96" screen. Well, I have been pretty happy with the results. Nothing is perfect and some DVDs are better than others. I don't have a 360 so you might just have to do your own test for a side by side comparison.
The PS3 is a far better DVD player. Actually, it's one of the best on the whole market.

Yes, the PS3 is the better upscaler. The 360 upscaler is not very good. I have both and I compared them. Sony is also updating the PS3's scaling abilities with firmware updates and they have said they will continue to do this into the future if they feel it can improve.
My PS3's upscaler does a near identical job to my Toshiba XA-1 HD dvd player which is by many accounts nearly the best upscaler out there.
2 reasons not to use the 360 upscaler to watch movies:
1. it is so loud that it distracts from the movie
2. the failure rate is so high that you don't want to leave it on any longer than you have to
I use my 360 for gaming only. That is what it is good at.

The standalone Toshiba HD-DVD players were the best (as well as the Oppo player), until the PS3 added the RGB option. This option worked miraculously for me set (Toshiba DLP) and the increased color depth put it past anything else.
PS3 wins easily for me.

Is the PS3 better than the Bravo D1?
Also considered to be one of the better -- if not the best upscaling DVD players when using DVI.

Never seen the Bravo, but I googled it and it seems to be a great player, espeacially if you need DVI. It does not do 1080p I believe though. It looks like it was initially released in 2003, so I would hazard to say the PS3 is using more current technology...

He's got a 720P projector.
The projector may have the best scaler, so try that out first.
But I would use the PS3 for DVD playback, simply because it's not as loud and is more reliable.
I typically use my computer with a combonation of FFDShow and Zoom player for my upconversion, but if I want to watch something upscaled and someone else is using the compy, I go the the PS3 everytime.
The last couple of firmware tweaks have made it an excellent DVD upscaler. Although I still can't get the black levels where I like them with it, which is the main reason I still use the PC as my main upscaler.
