I was wondering what the benefits/drawbacks are of tilt mounts vs. flat mounts?

Additionally, I know that HDMI cables can vary greatly in price...what should I look for when buying these cables (other than the length I'll need)?

We use a tilt mount as our Plasma is mounted over the fireplace. This way, when we lean back and look at the TV it looks normal, not angled.

Generally tilt mount are preferable in most applications. This will give you the option of tilting to minimize glare and minimize vertical viewing angle. Flat mounts have the advantage of being thinner and you would be able to mount the panel closer to the wall.

Shop MonoPrice for your cables ... they sell a good quality cable at really good prices. If your cable run is under 25' they'll all perform well for you. Don't let the salesman at BB sell you on the "benefits" of Monster cables at HUGE $$$$$.
