I have a question, is it possible to the use iPod touch as a wireless interface to access the music files on my computer which is connected to a 5.1 setup? I guess what I want to do is use the iPod touch as a wireless touchscreen interface?

Yup, all you need is Remote Buddy and a wifi network:

I just stumbled onto this thread. Considering that I was going to buy some rather expensive web-pads to do this very same thing. A $200 ipod touch is a no brainer....

No need for SqueezeCenter at all, his PC is already connected to his hifi so no streaming is required.
His best option right now is to use iTunes with the free Apple Remote software on the iPod Touch.

You right, I should not have said streaming. Squeezecenter will also work standalone with softsqueeze using the PC speakers.
Another vote for SqueezeCenter + IPeng.
I have not used the Remote Buddy (it is not supported on Windows afaik).
Edit: As mentioned - iTunes + Apple Remote looks very good.
Sonos is another option. I've got that running in my house and the iPod Touch (or iPhone) application for it is perfect. It's very slick.

I'm not fully sure I understand your post but let me try to clarify...
The Sonos can absolutely play music stored on a PC - in fact this was and is its main intent. In addition to that it can also interface with your Rhapsody, Pandora, Lastfm, and Sirius accounts to stream music for them. In addition to that it has a beautifully categorized listing of over 15,000 internet radio stations including all your local ones (it asks for your zip code and then automatically supplies your local stations). For that matter - you can browse any locations local radio stations if you want.
They don't have a player application that runs on the PC. You don't need to install anything on the PC in order for it to work. They do have a remote application that allows you to control your Sonos from your PC but again - you don't have to use it nor is it needed for the system to work.
And one further clarification - the Sonos will not play your music from your iPod through the Sonos application. It will use the Sonos application to control the Sonos just like the desktop software (except that it is built for the iPod Touch or iPhone and looks and works beautifully on it).
And one MORE clarification - the Sonos CAN play music directly from your iPod using the analog line-in connections on the back of the Sonos player. You would just have to use the iPod to control the playback which means it would essentially be tethered to the player.

Has anyone used a touch with a fireball. I am sure that it will support the pda interface but was wondering if the regular web interface worked as well. Also, has anyone come out with a nice recessed wall mount with power? $200 wifi wall pads would be great...

I think you shoud go back and read the first post. camaroz06 was asking for a solution that will allow him to control and play the play music on his PC, which is connected to his stereo, with an Ipod Touch.

Actually - the post stated that the user would like to use an iPod Touch to access music files stored on a PC that was connected to a 5.1 system. The post further clarified that the user would like to use the iPod Touch as a wireless touchscreen interface.
The solution I suggested will do both of those things. My solution may not use the computer to actually output the music but it will certainly allow a wireless touchscreen interface to the music and by purchasing a Sonos zoneplayer it will play the music through whatever speakers the user wants.
It was just a suggestion.
