The columns you see on either side of the stage will house a subwoofer and the left and right channel speakers (Axiom M22's).
I know I need to fill all of the void up top with insulation, but how do I "wall" the inside of them? Should i leave them as they currently are? Should I just insulate the side walls with more r13? Should I sheetrock them? Cover the inside walls with some carpet to deaden them?
The front will be covered with GOM. I'm just not sure what i am supposed to do with the inner walls besides filling the open cavities with insulation.
Obviously I'd like the most cost-effective option.

If that was mine. I would build the shelves for my speakers (2-3 layers solid) place the speakers in place than cut pieces of compressed fiberglass (oc 703) and stack until every cubic inch of the column is filled either with speaker or insulation.
Then put on your fabric and call it a day.
That should eliminate any unwanted resonances of the column and MAY act as somewhat of a bass trap.

I just looked up 703. That stuff aint cheap :(
Maybe I can line the inner walls with it for now and maybe stuff the rest with something a bit more affordable?

I found a 12 pack of 24x48x1 on ebay for 90 plus shipping. I will have to order more for later so if you know of a better option im all ears.

in my area, 64 sq feet of 3" batts of mineral wool = 28.48/bag at a local building supply
Might want to just get which ever is cheaper, or which ever comes in the right sizes so as to minimize cutting.

Anyone ever try listening to speaker both with and without insulation packed around them? My gut tells me that they would sound quite a bit different with insulation than in free air, but I've never tried.

Free air is fine but in this case more like listening to a speaker set inside a small closet or a deep hardwood bookshelf. The resonances that come off the hard surfaces are sometimes overwhelming.
Absolutely. If inside a cabinet cavity like that (not recommended but sometimes necessary), definitely fill with absorbtion to kill the resonances.

I'd also remove the drywall on the column sides facing inward and use fabric there.
