What is the best way for me to get component output from a mac mini. The reason I want to do this is for simplicity of operation (girlfriend factor). I would like to run the signal thru my several year old Denon 1905.

I am assuming I will need a transcoder if I want to go VGA to component. What about DVI to component?

The best way is not to try. Go digital or VGA, and go direct, or perhaps get an AppleTV.

Trying to go component is one level of complication that consumer level Macs don't handle well. You are also not simplifying things (for yourself) by trying to send video through an AVR, either, which usually adds a whole other level of EDID complication (i.e. retaining sync after switching away to other inputs.)

What if your A/V cabinet, in which the proposed Mac Mini is to go in, is on the opposite side of the room and it would be next to impossible to run 40 ft of HDMI to the TV? I had thought of the Apple TV solution but I do not believe it will play .m2t files that I have recorded from HDNet. The HK AVR 635 does not have VGA. With my current configuration, I am stuck with S-video that will get cross converted to component and sent to the TV. I could hook up directly to the TV but then I would not have the benefit of surround sound thru the receiver. I too was looking at the transcoder route.
