I want a big screen and that's why I'm going for the 58" Samsung 84. But I read up on OLED and it seems like an excellent TV; however, I also sawa label that said 40" was the world's largest OLED. Will OLEDs eventually get bigger, or are they really limited by their technology?

Take a number. You are in for a wait. Current pricing will gag you too.

OLED will certainly get larger than 40". They are basically easier to make than LCD or Plasma. But it will take still some time before we see larger OLED TVs. My guess is that in 2009-10 we'll see ~30-40 inch TVs, and larger ones will probably follow in a few years. Just like what happened with LCD TVs.
