I just purchased our first HD-DVD player the Toshiba A-35 and received 300 and Bourne Identity with it. I have no idea how to work the disc'c additional feature and I see no instructions. For example the Bourne Identity has something called U control. How does that work? 300 has an X on the menu bar what does that do? What other features not common on standard DVD's will I encounter and how do I work those?

There is a U-Control Tutorial on just about every U-Control enabled disk. Look in the the extras/special features/U-Control section. Warner's IME is self-explanatory; go to the section with IME and turn it on or off (an x will appear if it is selected) the other features can be found in the extras section.
The X on 300 (unless we're talking about the X that shows that you've selected something like the aforementioned IME)serves the same purpose as the X on the upper left corner of your web-browser; it closes the menu.
I normally just use the arrows on my remote; on Warner HD DVDs up to open the menu, left and right to navigate and down to collapse the menus. On Universal HD DVDs right to open the menu, up down and right to navigate and left to close.
300 has a simple little strategy game and a film editor that allows you to remove and/or re-order the scenes in the film. Look in the extras section for those.
BI has a nice U-control feature called The Treadstone Files that provides additional information on the characters in the film (who trained them, were they were born, their specialization, et al) it also has a GPS feature that shows where Bourne is traveling and whatnot.
As a general rule I found U-Control to be much more involved than Warner's IME. With IME you turn on the In Movie Experience (say the green-screen PiP in 300) and watch the film. With U-Control you need to decide which U-Contol feature you want to use and when. There are instances on Bourne ID where you will have the option to bring up the Treadstone Files Display or The Director's PiP Commentary or the GPS HUD; it is up to you the viewer to decide which one to engage. It is a little less user friendly than Warner's IME, but it also adds to the replay value because you simply can't check out all the U-Control features on BI the first time through. You will need to watch Bourne 2 or 3 times with U-Control engaged in order to catch everything.
