I have been ripping my DVD collection using Handbreak and just came across DVDpedia which I plan to use as well. Here is what I want to do. If anyone can help me it would be greatly appreciated.

I already own an Apple TV. My goal is to ultimately have my entire movie collection be digital. What is the best way using Apple TV as my dedicated movie player (assuming this is the best choice) to build and then access the movies. Right now I am storing all my movies to an external hard drive. What is my next step to make the movie to get them to work on my big screen as easy and simply as possible.

Just place the movies on your external Hard drive and have the Apple TV stream them from there.

When you say place on the external and stream them don't you have to put them in Itunes and have your ATV stream the content via Itunes with the computer on? I wasn't aware you could stream without having your computer on. My setup has the movies/tv shows, etc on my DNS-323 (NAS)that my MAC points to, but the ATV needs to see Itunes to effectively stream from the NAS. Am I missing something or is there a way to streamline that process and cut Itunes out of the picture.
