I'm stagger framing the framed walls of my mini-home thater that is on the second floor of my home.

Should I just use OC fiberglass insulation on one side of the drywall, or is there a better product?

Also, what about underneath the floors. Besides carpet, padding, etc. what should be in the trusses underneath the floor for best sound absorption/isolation.

GPower nailed the sandwiched drywall with green glue in between.

Question is what is your OC for the studs? (16" or 24")? How about the floor trusses?

For INWALL you would need either

1. Normal Fiberglass.
2. Ultratouch Cotton insulation.

forgo blown insulation, you lose acoustical dampening to increase thermal insulation.

both work well

the cotton is more expensive but I will tell you this. No need for gloves or any other skin protection as it is, well cotton. :) You WILL still need a respirator though as the cotton fibers of the bat are small and get released when you put the insulation on the wall. It will irritate your lungs!
