Optical for all except on the PS3 and the A30

The PS3 can send MPCM (Multichannel PCM 5.1/7.1) via HDMI. It can only send two channel via optical. A30 does also MPCM to.

You could also buy an HDMI switchbox to increase your number of HDMI connections.

HDMI is particularly useful for the PS3/A30 for lossless audio (if your receiver supports MPCM over HDMI properly.)

HDMI may be nice for the 360 because it avoids an analog to digital conversion of the video signal, but component looks great, that's what I use.

No clue about your cable box. If you have not gone high def, any connection will probably work. In the future, HDMI will be the way to go for cable as it will be all digital.
