New guy with NAD master series stuff - HELP!

I registered for this forum to try to tap into the wealth of knowledge out there. I am reading all I can and many of you are very impressive. I am a newcomer to the High-Fi community. I've dreamed of a quality system for ever but, thanks to my wife and 4 great kids, only now am I finally dabbling in it. I recently acquired the following:

My family bought me (to get this party started):
Rotel RMB-1095 5 channel x 200 amp
B&W 703 speakers with Tara labs bi-wire speakers
A Rotel 5 CD changer RCC-1055
As well as a Rotel tuner RT-1080

I bought to complete at least the Two channel set up:
NAD M15 Processor
NAD M55 Digital disc player
Rel Signature III Sub (older model and gift from friend)

I now need to tweak everything out to work well
So far I have hit a few problems that I’m not sure how to resolve

1- All I can get is black and white images on the TV when I run the DVD Video through the processor. I friend told me not to anyway and connect the video directly to the TV. I don’t like this because it would have to be a different input and then I have to toggle back and forth when using the OCM’s for the M15 and the M55. However I did this as a test and the picture was great as well as the OCM was color. When connected through the M15 both OCM’s are black and white. I need to confirm if the M15 I have has a problem or is there a setup I am missing.

2- I have read that the NAD Master Series had great Synergy with each component and that to truly enjoy the benefits of this system I should stay with all 3 components. I don’t have the M25 7 channel amp but instead I am using a Rotel 1095 5 channel amp. I believe I have a great amp but does anyone (not trying to sell an M25) think I am missing the boat not using the M25.
