Although I have a DirecTV Tivo unit which I am very happy to pay for and use the service with, my Dad has a different need.

He currently has 3 VCRs that run almost non stop on weekends recording Golf and PBS. He doesn't want a guide, interest-based recordings, time-shifting. He basically wants a device that will do manual time/date-based recordings the same as a VCR, but without the tapes.

HTPCs are not turnkey enough for him and I really don't want to hack a Tivo or ReplayTV.

Any ideas?

If he likes to keep all those recordings, then what he is doing is the cheapest, best way to do it.
Otherwise 3 replays would do the trick, but that would be quite a few $$$$. The replays have a nice manual record option, and you could watch any show off of the other 2 replays over the network.

Poke around in your local Circuit City and look for a DRS-7000 (or newer DRC-7005) DVR from RCA. It is basically a digital VCR. It does have Guide+ which you can use to set recordings from cable or antenna feed (satellite listings are not supported by Guide+). It has its quirks, but for ~$250 and no subscription fee it delivers on value. Also, it has EXCELLENT recording quality.
