I want to put together a PC based HD DVR that can record off satellite. Is there such a piece of hardware and software that would allow this? I just want some sort of stopgap measure until the new DirecTV DVR with MP4 is available.

No such thing. Cable and Satellite STB's use HDCP copy protection with HDMI. This is to prevent external recording. You can't legally break it.
