Does anyone know where to buy a cheaper mounting plate for the UH480 (or have one they would like to sell)? or possibly have a decent DIY solution? The UH480 is too heavy for the solution I have at the moment. Thanks for your help!

1/2 inch plywood paint it black and it look just fine. You need to replace the mounting screws with longer ones and maybe some washers. The wood plate will fit between the mount and projector all the rest you can figure it out yourself hopefully. To make it slide, find a couple of drawer tracks and cut the slide lengths to limit the reach.
Hope I have given you a idea.
