I hear you, and understand it's a common sentiment, but I find Crysis 2 and 3 (and the current Killzone, for that matter) to be more than solid from a single-player gameplay perspective.
These games don't do anything different, but once their sweet spot is found - stealth, assault, defense, exploring, or a mixture of all, then they really shine as a simple shooter. At least as good, and at times better than, the beloved Halo series. The only weekness of these games is, for the most part, there's a lack of upgrading/building/developing. Find that sweet spot early, and it's rinse and repeat throughout the game.
I think because they look and sound so good, people hold a high expectation to have the same advances in gameplay. But as mentioned, they are "simple shooters", and IMO very good ones.
I can't speak for mutliplayer, which seems to be most of the focus with FPS's these days. Also, sorry for OT, but felt I had to defend Crytek.
