I am betting the demand is pretty high - if you do a google search there are quite a few threads, besides on here, about wanting an extension cable. I don't think relying on people to PM you is a good gauge. For example the Xbox One has done over 5 million units as of April, so even if only 1 of every 1,000 people need a extension cable, that is still 5,000 units worth of demand (way more PMs than you will ever get).
The demand is there...the bigger issue I think is getting manufacturing up to specs and tested. For example, can he make sure there is no loss of fidelity or lag issues, will the cable be CL2 rated (a certification needed for in-wall install, which most if not all people will need, this means an independent party test to certify), etc.
I think I speak for most of us, if he can get a cable up and running (the video looks promising) we would buy it. Perhaps start a Kickstarter campaign for funding as I bet manufacturing isn't cheap to get going? This would also allow him to set a dollar amount threshold that would enable mass production to ensure he can get the volume he needs for it to be profitable for him and to fund the R&D to go beyond the concept.
