I've been wondering, since Microsoft's Xbox 360 upscales games into 1080p itself, while Sony's PS3 just outputs them in their native resolution of 720p, would this mean that the 360 would have ever-so slightly less lag since the TV doesn't need to scale a 720p image into 1080p? Or does the 360's upscaler add its own lag?

It depends on the display and how it handles incoming 1080p. At best they are the same, at worst the PS3 would be a little slower. What is certain though is that the 360 will always spit out that 1080p signal, whereas the PS3 will constantly bounce between 1080p and 720p as you use different apps, causing your display to constantly resync. In the end, the 360 is just a much nicer experience in terms of resolution handling.
