I have a 50" Plasma and am putting in a home theater projector, probably 120" 16x9.

What are the pro's and cons of gaming on the projector vs keeping the Plasma behind a motorized screen for gaming?

Viewing distance is 11', ceiling height is 9'.  Projector throw will likely be 10-11' or so on the ceiling.

Bulb Life and cost. 120" also a bit big for 11'. I'd probably aim for 110.

Kinect doesn't work well with my PJ Setup or in the dark. New Kinect 2.0 might be better but there's no extension cables for it so I can't tell you. I also have pot lights. The light from the PJ seems to mess with Kinect. Some games are fine. But things that need precision like darts it gets jumpy. Wii isn't as bad. Then again I haven't turned on my wii in at least 2 years.

Depending on PJ, there is burn in on LCD PJ's. Not sure how much gaming you do.
