Hi!
I have a denon avr-390 connected via HDMI cable to an Optoma projector (I have no TV at home) and tried to connect a Wii console (PAL european version, set to 576i) to it using its standard composite cable (yellow/red/white): audio is working ok, but there is no video output.
If I connect the composite video cable (yellow) directly to the Optoma it works.
If I connect an XBox 360 to the same RCA connectors it works so the RCA to HDMI conversion is working.

What can I try to make it works?

Are you sure your Denon accepts 576i signals?

Yes, these are the supported video mode: 480i/480p/576i/576p/720p/1080i/1080p
