I have a 7.1 set of speakers, But if I play 5.1 surround sound,
which speakers should sound, LS and RS or the back surround speakers ?

My last question , which surround speakers play more bass, L,R surround or the back surround speakers ?

I think it depends on the AVR, but you'll probably have a choice of one pair, or both pairs (playing the same). As for bass, that will depend on the mix, and the settings you select for each set of speakers. But generally, the bass is routed mostly to the sub, and the front L/R, as those are typically the larger speakers.

I have an old onkyo 605 7.1
And I have 2 different pairs for the back, 2 polk audio owm3 and 2 Pioneer satellites.
Testing this 2 in the same channel, I can hear some bass coming from the polks but no bass at all from the satellites .
So, should I use these polks for Back or sides ? and I mostly play 5.1 than 7.1 from my movies...

what you experts recommend ?
