Can you convert a single Cat 5 into a HDMI connection?

Yes, but expensively. Check out monoprice for HDMI Extenders:

Single Cat5/6 solutions are $200+ish, while double Cat 5/6 solutions are $20ish. Might be worth dragging the extra cable if you can.

But avoid the $20 solutions for anything but very, very short runs or well-known configurations of "known to work well" components. Monoprice dual-cable, but powered (with external DC adapters) units for ~$50 will be much more reliable.

The HDBaseT extenders in the list Naylia points to will be by far the best answer, as they also includes IR repeating, and one of their models (for $30 more) also includes Ethernet repeating. Depending on your needs, that may make the total cost more appealing. Monoprice doesn't list HDBaseT in the description, but you can pick them out by their "328 feet" rating...
