I'm new to all of this. I am going to be ceiling mounting my projector. I presume that the only thing I need run to the projector is a power outlet and one HDMI cable, right? Does everything else plugs directly into the back of my receiver (i.e. cable box, dvd, gaming system, apple tv, etc.)? My receiver has 5-6 HDMI inputs plus a few component inputs and an ethernet input. I can't thing of any other needs as I will use my apple tv for music if needed. Is this right?

Thanks for all of the advice you give to newbies like me on this forum!

from a functionality standpoint, you are good with one HDMI and power.
Now, if this is a house under construction and you are prewiring and planning on being there for a while, then there are a few things you could install now to prevent a lot of extra expense down the road.
a cat5/6 or two for remote control interfaces or future video formats not even of the radar yet. Conduit is always nice to allow new cables to be pulled if needed.
better advice comes with more detail of scope and pictures, pictures, pictures

Here are pics of my room. New carpet coming this weekend. This was a conversion from my kids playroom so I didn't have the ability to wire it pre-drywall. I plan on placing my components in the room inside that door. any suggestions, etc., for wiring would be great. Thanks!

get the wiring done before the new carpet arrives. oops, probably too late. It looks like you are going to have to cut open the drywall to run most of your cables, so it would (have been) easier to keep that mess off the new rug.
Are you thinking 5, 7 or more full range speaker locations? Sub location(s)? IR remote receiver to run components in adjacent room or RF remote repeater type? Do you need data ports in the component closet from your home network? Cable TV? Satellite? Lots of wires to lots of different locations......time to start drawing and calculating footages.
