I think you're stuck searching through the websites of the various mount manufacturers. Try Peerless, Chief, Omnimount, Sanus, Ergotron, others. Calling sales support might be quicker, for each.
I just did a quick Amazon search - a couple no-name brands are there, but I'd have some concerns about quality.
If you can't find a single stud mount for a 60" display, you may consider a ceiling mount - top of the mount pole lagged to a joist, positioned near that wood column.
Your center channel speaker could hang from (or sit above) the TV/mount, looks a little nicer.
I'd probably get on the phone and call the major mount manufacturers directly, to find out if they offer single stud mounts for a 60" display. If you have the $, some will make it for you.
Edit - find the weight of your TV. Doing a google search of "single stud" TV mount 60 gives a bunch of hits, but unknown quality. If it wasn't a special case of articulating single stud, I'd say buy whatever, but you really need something that won't fail.
