When I using a CD player ANALOG OUT (connected with an integrated amp) to play a CD, could I use the DIGITAL OUT (connect to a DAC) at the same time?

I would say, most likely, yes. I can't speak for all players, but the 3 players that I have familiarity with will.

If the digital out is coax or optical, almost absolutely surely both the analog and digital outputs work at the same time. As a rule those outputs don't inform the device as to whether there is anything attached to them or not.

HDMI can be a different story - the player "knows" what and if something is attached to it and may be making choices for you.
