Basically I'm just wondering if the speakers XO (Alchemy MTM) does enough to protect the speakers if I was to just plug an old ipod into my amp and use it's volume control? My Processor isn't here yet and I'm really itching to test stuff :D

You can run them full range with some good power, you just aren't going to get any low bass.

Glad to hear it will work.... Sadly, I'm quite aware of the no bass part. I've been sub-less for almost a 7 years now. It's a crying shame I know. I had one and then I blew the amp. Then there was the military. Then there was a house fire. Then there was apartments.... soon though. Very soon. I ran my old Klipsch system sub-less this whole time.
