Looking for some suggestions.

Have an older car with a shallow space behind the dash. Can fit double din height, but not width.

What I really want is something modern with GPS, Bluetooth phone connectivity and all that good stuff, but with the controller in the trunk and a narrow (shallow) head unit that incorporates a 6-7" touchscreen. I don't care about a CD, but I'd like A2DP if possible.

I've poked around and can't seem to find anything that looks even remotely like what I want.

Any chance anyone knows of something I might have missed?

With those specs, you are really looking at a CarPC.

That's right, a computer that you use for all audio, gps, etc... functionality.

Give that a google...

I know what it is. I discounted it.
I want a piece of consumer electronics, not hours of debugging device drivers.

If I wanted to spend time doing that, I'd get paid for it - life's too short to be doing it for the toy. That I want to drive.

I had to do some custom work along these lines.

First of all you won't get a "shallow" machine because most of them are DVD players so they will be as deep as the diameter of a dvd plus a little bit.

The way around this (and you need to be good with a soldering iron) is get get a dvd/nav head unit with detachable face.... (I have a jvc detachable face machine). The actual head unit can be mounted under the drivers seat or some other close by area. Soldered lines will run from the socket on the head unit where the face is supposed to connect, to the socket on the back of the face plate. (In essence you're fabricating an extension cord)

The face can then be surface mounted directly onto the dash with a small hole behind it for the wires to run. In my case the face was mounted on a small hinge system and hung from the center roof console.
