I'm trying to incorporate a computer or possibly an Apple TV (jailbroken to allow XBMC install) into my Buick Enclave so that I can stream movies to already installed headrest video screens utilizing the Aux input on each monitor. I know it is possible, but I would like to get some ideas from the guys and gals on this forum....

The movies that I have will be in m4v or mp4 format. I will potentially get the occasional mkv format also, but I plan on utilizing the smaller size movie files since the monitors are 7".

I have installed a WD TV Live in my truck, which will do what you are asking for. The advantages are that it is 12 volt, so no mods for power were required. Also, it plays every format, no conversion ever required as I have not found a format that it wont play right out of the box. They are cheap and readily available, and with wireless, I could even do online streaming services by using my phone or ipad as mobile hotspot.
