Of course you can make movies look like movies. You simply turn off Motionflow unless of course you prefer the Soap Opera Effect. In fact, Motionflow is not really needed at all if your passing BluRay as your film source as it's already a perfect 1080P at 24FPS and it's not needed in that case unless of course you prefer that Soap effect. Some movies actually have Judder as a natural element and it's so rare IMO that it is of little concern even on an antique 60Hz panel - I own four LCD TV's and have no issues with "Judder" at all, perhaps your hypersensitive to it.
I own the "Z" also and enjoyed viewing content with Motionflow as a novelty just to play with and found it interesting but turned it off for most all Blu-Ray since it can make certain film look goofy, a good example is viewing King Kong where things look more like claymation than film. Yes, Motionflow is controllable on the Sony just as it is on the Samsung.
