What hdmi cables do you recommend for 8ft cables for the best picture and audio quality?

As long as the cable is certified as a High Speed cable you should be fine with any cable. The key are the words "High Speed" and "certified". Basically there are only two types of HDMI cables - standard speed and high speed with some options.

The cables transmit bits as electrical signals, so as long as you don't have errors (and you'll know if you do) the output signal will be the same. I wouldn't pay more than $12 for a good 8ft cable.

I asked because I was shipping mono price cables to replace my Sony cables. The mono price meet specs but how well built are they? Cheap un shielded cables are horrible for picture.

It's digital. You either receive the 1s and 0s or you don't. There is no subtle change if you get errors. So you don't have to worry about an unshielded cable - just check for certified high speed.

Yep, as long as the connection makes it through the cable fun, build quality does not affect the picture. Just go with a low cost high speed 8ft cable and you will have a great picture.
