Two points/questions on your material lists:
You call for fir framing material. I'd use "white wood" (spruce or pine) everywhere except for the joists that are only supported at the ends. Fir is more expensive and has a tendency to split. There is no advantage except on the joists where the stiffer material may be better. Even that is doubtful since the spans are so short. Personally, I'd use pine everywhere.
How do you plan to attach the cabinet grade oak decking to the stage? It may be easier and more economical to use structural plywood and overlay thinner oak with glue and finish nails.
