One doesn't usually use OC703 for insulation (in the wall) - rather, for acoustic absorption (on the wall).

I meant 24" stud spacing, there'll be 1-2" between the screen wall and the wall behind it, should I plan on covering that hidden wall with OC703 as the window will be filled with either polystyrene or OC foamular panels?

Two points/questions on your material lists:

You call for fir framing material. I'd use "white wood" (spruce or pine) everywhere except for the joists that are only supported at the ends. Fir is more expensive and has a tendency to split. There is no advantage except on the joists where the stiffer material may be better. Even that is doubtful since the spans are so short. Personally, I'd use pine everywhere.

How do you plan to attach the cabinet grade oak decking to the stage? It may be easier and more economical to use structural plywood and overlay thinner oak with glue and finish nails.

So I just had an interesting Thanksgiving (hope you all did too )
Net result is I've had the go-ahead to start construction and we have a 3-4 week window to complete it so (as long as it goes to plan - how often have we all heard that before!)
Looks like December's going to be an expensive (and hopefully rewarding) month

Ran through the plans again, following updates:
1) Riser will now be extended to replace the bottom step tread, this will make it even stiffer and remove the problem of what to do about the join/gap where it met the bottom step.
2) Screen wall is now 6" taller as I'd missed the 7" screen border when measuring for the screen.
3) Curtain wall will either be extended or I'll mount the projector off the bottom of it so that the lens is within the top edge of the screen.

So here's my initial rough plan on how to treat the room, in addition I have the curtain wall which will come down 3-3.5' from the ceiling above the bar which I need decide wether to fill with 2" or 4' OC 703.
My plan is to do behind the screen wall and the curtain wall during construction and then add the other afterwards as required.

Does anyone have any thoughts?

You're making good progress. Is that Pizza in the second shot, on the bar?

I'l still bury the fireplace. Do you think you'd ever use it? Looks too close to combustible surfaces to be safe.

Oops yes it was, all gone now
Still not sure what to do about the fireplace, we've just ignored it for the moment (we've never used it), depending on how it goes when I install the fabric panels I'll either leave it exposed or just panel over it.
