So the JBL Sound bar has 1 optical, and left & right RCA's. My TV does NOT have an optical port … it has a digital coaxial port, and of course RCA's. My sources are an Apple TV (HDMI/Optical) and a Blu-Ray player (HDMI/Optical) … what are my options?? I know I could use just the RCA's … but would that still pass all the digital processing?

Ideas??

You have a few choices. You could get a coax to optical converter so you can connect the TV to the bar that way. The audio might be about the same though as just using standard RCA cable. You could get an optical switch and connect both your devices to that and then connect switch to sound bar. You could connect the BD player directly to the sound bar via optical and then use RCA from the TV for your Apple.
