The pedastal light level caused by the ambient would be absorbed by the grey and the projector picks up from that point and produces the image. There is no reason that I can think of that would stop this producing a good image with excellent blacks.

Has anyone tried translucent black stocking/net material over a white background? I am hoping that the background reflect white from a bright (2000 lumen) projector, while the stocking material absorbs ambient light and shadows the white from ambient.

The net effect might be better black levels under ambient conditions.
I assume that the pitch of the net is small enough so that the net pitch is not obvious to the viewer.

Matching a stencil would be obviously impractical.

The idea behind a woven stocking-like net would be to create a recessed bright area shadowed from ambient light. The thread size would half to be much smaller than typical pixel sizes. Essentially a screen door over white where the holes are small enough to not be noticeable and the screen wires able to shadow the hole interior.

A potential problem would be Moire fringing.
