My new HT website (click here) includes a page about my homemade screen which includes fold-down 2.35:1 mattes to mask off wide-aspect-ratio movies. Most of the ideas came from this forum, although the fold-down matte design was my own creation.

Very Nice Home Theater...
I especially like the Seating you found.
Please tell me you are going to paint that WHITE door next to the screen or at least hang a curtain over it.
When you decide to upgrade the Speakers, my suggestion since you seem woodshop handy would be to consider building custom Horn speakers.. (just like the theaters have).
